Ingredients:
1) quinoa
2) sweet potatoes
3) chicken
4) Peri peri salsa
5) Corn flour
6) Ripe mangoes
7) Cilantro
8) Salt
9) Lime juice
10) onion
11) peppers
12) Fajita seasoning
13) grated cheese
Note: you can add sour cream, salsa, or avocado
Preparation:
1) Marinate chicken and sauté or use air fryer to cook for 20 mins
2) Make a bowl shell by baking the tortilla, in a bowl and use aluminum foil to keep the tortilla pressed while baking
3) Mix mango pieces, onions, cilantro, lime juice, sea salt, habanero to make salsa
4) Cook quinoa with some salt
5) Fajitas seasoning on peppers and onions cook for 2 mins
6) Assemble the bowl as you like
