Today I’m sharing a delicious vegetable soup. It’s so quick and easy to make and perfect for using any left over veggies in the fridge so they don’t go to waste. The great thing about this soup is that you can substitute and add any veggies you like. I like to add lemon to my soup which gives it a nice tangy taste.

Ingredients:
5-6 Golden potatoes
4 Carrots
3 Celery
1 Onion
1 cup Frozen Green beans
1/2 cup Brown rice or regular White rice
1/2 Tbsp minced garlic
2 Tbsp Tomato paste
1 tsp Rosemary leaves
1 tsp Thyme leaves
1 tsp Smoked paprika
2 Bay leaves
2 (32 oz) boxes of Vegetable broth

Toppings Optional:
season with salt and black pepper
lemon
parsley or cilantro
Or for a creamy texture add:
shredded cheese or sour cream
